This That: Zucchini Spaghetti for Wheat Spaghetti

When I don't feel like making a feast or need a quick dinner, pasta is my go to meal. With the right combination of herbs and sauce, it feels so right to indulge in pasta once in a while. However, it often makes me feel sluggish, tired and heavy. Do you feel the same way? What if I told you that you can still keep the easy prep and make a delicious pasta dish without the blah symptoms. Two words: Zucchini spaghetti.

Use a spiralizer to slice your zucchini (noodle style) and place in a strainer. Add a few dashes of sea salt to the zucchini and toss to coat. Allow to sit in the sink for about 15 minutes. This will help some of the excess water drain out from the zucchini. After salting the zucchini, wrap it in a few paper towels and squeeze gently to remove any remaining moisture. Toss the zucchini spaghetti in your favourite sauce and voila! You got yourself a delicious pasta with added nutrients and more veggies that leave you feeling light and satisfied.
