**Happy National Popcorn Day - here's a repost of my famous popcorn recipes**

The Oscars are tomorrow and even though I haven't seen most of the movies that have been nominated, I'm still looking forward to the awards show because ... Oscar time means snack time! Whenever I watch a movie or an award show (like the Grammys), I prepare a few snacks and sip on a tasty drink. I like to make an event out of it. It's a great way to end the weekend and celebrate the start of a new one (yes, I look forward to Mondays! Nerd alert!).

Because the Oscars is all about movies, I came up with 3 popcorn flavours to indulge in guilt-free. Are you ready for 'em?! Let's begin with the light one... Pink salt + Kale Popcorn.

Pink Salt + Kale Popcorn

Ingredients

  • 1/2 cup Solar Raw Pink Salt Kale Chips
  • 1 tbsp Coconut Oil
  • 1/2 cup kernels

Steps

  1. Melt coconut oil in large pot over medium-high heat. Once hot, add kernels to the oil and cover with a lid.
  2. Shake gently every so often to be sure nothing burns on the bottom. After about 25-45 seconds, the popcorn kernels should all start popping around the same time. Keep the lid on and continue shaking gently from time to time.
  3. Once all the kernels are popped, pour the popcorn into a large bowl immediately. Crush the kale chips in separate bowl and add to popcorn.
  4. Mix thoroughly.
  5. Enjoy!

  2. Melt coconut oil in large pot over medium-high heat. Once hot, add kernels to the oil and cover with a lid.

Now for the final flavour of the evening: Let's say it brings together two trendy flavours. It combines my favourite pancake topping with a meat lover's favourite (sans meat). Maple bacon popcorn! I took the recipe for my coconut bacon and made it into a popcorn add-on. It's kick ass (and delicious)!

Maple Bacon Popcorn

Ingredients

  • 1 tbsp maple syrup
  • 1 tbsp gluten free tamari sauce
  • 1 tbsp liquid smoke
  • 1 tbsp Coconut Oil
  • 1/2 cup kernels

Steps

  1. In a small bowl, combine maple syrup, tamari sauce and liquid smoke. Set aside.
  2. Melt coconut oil in large pot over medium-high heat. Once hot, add kernels to the oil and cover with a lid.
  3. Shake gently every so often to be sure nothing burns on the bottom. After about 25-45 seconds, the popcorn kernels should all start popping around the same time. Keep the lid on and continue shaking gently from time to time.
  4. Once all the kernels are popped, pour the popcorn into a large bowl immediately. Pour sauce over popcorn and mix thoroughly.
  5. If the popcorn seems soggy, transfer to a large roasting pan and bake for 8 to 10 minutes (in 325 degrees), stirring every 2 minutes. The popcorn is done when all the pieces are no longer soggy.
  6. Enjoy!

These three flavours will satisfy the spicy lovers, meat lovers and kale lovers. Are you planning an Oscars event? What are some of your favourite movies up for an Oscar?
