Mondays’ got a bad rap. Some of us dread Mondays, reminiscing about the weekend and planning the next adventure for the following weekend. Never living in the moment and always looking ahead. It’s quite the dreadful circle when you think about it.
What purpose does this feeling give us? Instead of fuelling our life with creativity, feeling energized and conquering the week, we begin with a negative attitude which only dampers our day and/or week. The only way to turn things around is by changing our thoughts and incorporating more positive fuel into our day.

Plan your favorite activities on Mondays. Not only will you look forward to the start of the week, but you will fuel your mind, body and spirit. When you immerse yourself in things you enjoy, it will help boost your mood, lessen your stress, and expand your creativity.
Think of Monday as a new day to achieve your goals, start something new, a blank canvas for whatever it is you want to achieve. The weekend will eventually come. So let's stop waiting for the days to pass and let's begin living our life to the fullest.
Lunch Box Series: Turkey Burgers on a bed of mix greens and quinoa
The last couple of days have flown by leaving me exhausted. I lacked time to cook, most days I grabbed a sandwich, smoothie or/and pad thai. I felt my body craving a home cooked meal. I felt anxious thinking about what my next meal would be considering my options were limiting.
This week I told myself that I will only have home cooked meals. So let's begin with Monday's lunch:
1 red bell pepper, sliced into cubes
1 clove of fresh garlic, chopped
2 tbsp fresh chives, chopped
2 tsp hot chilli flakes
½ kilo ground lean turkey
Salt and pepper to taste
- Preheat your grill to medium.
- Chop all of the vegetables and set them aside.
- Place the ground turkey in a large bowl.
- Whisk the egg and combine the egg with the turkey.
- Add all the vegetables and spices and mix everything together with your hands.
- Form into patties.
- Place patties on grill for 4-5 minutes on each side or until fully cooked through.
In your tupperware box, add cooked brown rice or quinoa (cook according to package), top with mixed greens, bell peppers, carrots and turkey burgers. Bon appetit!
