When the summer heat hits, you often crave cool and refreshing fruits like tomatoes, cucumber, celery and strawberries. You want lighter meals that will hold you over and keep you cool. That is why I want to share with you a simple yet flavourful strawberry basil salad.
This past weekend, Toronto was a sauna and a heat warning was in effect. I took this opportunity to relax and enjoy my patio with refreshing smoothies and salads. One of the salads I made was the Strawberry Basil salad, which features a variety of flavours - sweet, tangy and earthy - which stimulates the tongue in 3 key areas: sweet, sour, and savoury.
- fresh strawberries
- salt and pepper to taste
- extra virgin olive oil
Mix the first 3 ingredients in large bowl. Drizzle with oil and season with salt. Keep in room temperature for 30 minutes before serving for the flavours to settle. Enjoy and stay cool!
