I've tried various pudding recipes and none of them really stuck with me. I didn't like the ingredient combination or texture. But things changed once I experimented and added cacao powder and chopped almonds instead of almond butter. It was out of this world good.
Chia seeds are considered a superfood and contains omega fatty acids, calcium, antioxidants and fibre. You can add them to your morning smoothies, oat meal, cereal or desserts. Here's how to make this delicious (and nutritious) pudding:
- 1/4 cup chia seeds
- 1/4 cup almonds, chopped
- 1 tsp vanilla extract
- 1 tbsp cacao powder
- 1 tbsp raw honey
- berries or sliced banana
- Mix all ingredients (except for water and toppings) in a bowl.
- Add water until all ingredients are fully covered.
- Let sit for 30 minutes for chia seeds to absorb the water.
- Top with berries or sliced banana.
